1 1/2 c oil
2 c sugar
4 eggs

2 c flour
1 tsp salt
2 tsp baking soda
1 1/2 tsp baking powder
2 tsp cinnamon

19oz can crushed pineapple
2 c grated carrots

Icing: 4 oz cream cheese
4 oz butter
1 1/2 c icing sugar
1 tsp vanilla

Directions:
Directions:
Mix the first 3 ingredients together and beat well after each egg.
Blend dry ingredients together and add to egg mixture. Do not beat just fold.

Add pineapple and carrots .

Bake at 350º for 35 minutes. Cool

Add icing .

I've had a lot of carrot cakes but this one is so very moist I get a lot of compliments on it. Of course the icing is sooo good, sometimes I double the icing so it's nice and thick...
