1 1/2 C flour
1 tsp. baking powder
1 tsp. baking soda
1 C. raisins
1 tsp. cinnamon
1 C. white sugar
1/2 tsp. salt
1/4 C unsweetened apple sauce
1/2 C vegetable oil
2 eggs
1 C pureed pumpkin

Directions:
Directions:
Preheat oven to 350 degrees.
Combine all ingredients and pour into greased loaf pans or lined muffin tins.
Bake 25-30 minutes
Makes 2 loaves or 12 large muffins.
Excellent for freezing.

A lovely recipe from my mother in law. It is so simple and is good as muffins or loaves, I like to make mini loaves and freeze them.
In the fall when pumpkins are plentiful I cut and roast the flesh, drain the pulp well and then freeze in 1 cup bags for use in this recipe and soups.
