Directions:Saute Onions in a large stock pot (the one you will use to cook everything) add fat from meat trimmings to onions Remove pot and set aside.
Brown meat then add to onion, add some water, cover and cook until tender (approximately 1.5hr. check water occasionally
While pork is cooking start working on the spazel (dumplings) Puree potatoes pour into large bowl and start the magic! Add 2 Eggs and mix into the potatoes, Now the hard part starts....start adding flour 1/2 cup at a time.
You will know the mixture is right when a spoonful of the potato/flour mixture takes a couple of seconds to fall off the spoon. Poppy Trier say he knows this is not a very concrete way of judging the consistency of the mixture but you will learn by experience (just don't let it be too sloppy).
While you are doing this put a large pot full of water to boil with the spazle maker on the pot, add the mixture to half fill the hopper, make the noodles (try not to be too sloppy). noodles will drop from hopper into boiling water. If you don't have a spazel maker you can put the mixture onto a plate and with a fork flick pieces of batter into the boiling water (this is the way Grandma, Maryin Trier always did it)!
Be careful not to let the mixture boil over in between adding the batter...
Let "Noodles" boil for about 10 minutes remove with large slotted spoon and add to meat/onion pot. When all the noddles have been added to the meat mixture, gently mix.
Add the cottage cheese mix some more and let sit a few minutes.....
Now Pray and taste the final project and say "Come and Get it"
