1 onion, diced
2 jalapeno peppers (seeds removed), diced
3 cloves garlic, minced
1/2 red or yellow bell pepper, diced
6 to 8 chicken thighs
1 1/2 teaspoons chili powder
1 1/2 teaspoons cumin
1 1/2 teaspoons oregano
Pinch of crushed red pepper
1 can (14 ounces) diced tomatoes
3 cups chicken broth
1 pound dry beans (I used pinto)
1 cup frozen corn
Salt & pepper to taste
8 ounces cream cheese
1/2 pound bacon, cooked and crumbled

Directions:
Directions:
Add all ingredients except cream cheese and bacon to the crockpot. Cook on low for 7 to 9 hours. Shred chicken with two forks.

Add cream cheese and bacon.
