1 med onions chopped fine
2 tbsp. butter
1/4 pepper paste
salt and pepper to taste
1 lb. of fresh shrimp
1 can diced tomatoes
1/4 cup of flour
1/4 cup of milk

Dough
3 cups of water
1 tsp. salt
1 tbsp. vegetable oil
3 cups of flour

Fry onions and butter until soft, add salt and pepper paste, cook for 3 minutes add tomatoes and shrimp. Cook for 2 minutes then add mixture of flour and milk to shrimp mixture until thick on medium heat. Let cool while you make the dough.

For the dough;
Boil water add salt and oil. Boil add flour stir on medium heat until it forms a ball.

On a floured surface.Roll dough out a portion at a time until very thin, Cut with large water glass, then add 1 tbsp. of filling onto one side of circle. Fold in half and pinch edges, then dip into 2 beaten eggs, then fine bread crumbs. Fry in large skillet which has about 1 inch of hot oil in it.
Cook until brown then flip over to cook other side. Served cool.

This recipe makes about 75 perogies , I freeze them before frying, in layers of wax paper, then fry when company comes, so they stay fresh. Recipe from my oldest daughter Wendy.
