1/4 cup butter
2/3 cup honey
3 eggs beaten
1 cup smashed banana
1/3 cup water
1 tsp. vanilla
1/4 cup milk
1 tsp. salt
2 tsp. baking powder
1 tsp. baking soda
2 cup flour
walnuts and raisins (optional)

Directions:
Directions:
Cream butter and honey until light and fluffy, beat in the eggs, banana pulp, water and vanilla.

Stir together the dry ingredients, stir them into the first mixture, blending with as few strokes as possible.

Stir in 1 cup walnuts and 1/2 cup raisins, if desired.

Turn the batter into a greased and floured loaf pan. Bake at 325ºF for about 1 hour, or until well browned and toothpick come out clean.

Makes 1 loaf

This is not just any banana bread, the honey gives it a lovely flavour. I sometimes add chocolate chips to it, when I know the grandchildren are coming for a visit.
