2cups all purpose flour
3 tbsp. sugar
1 tsp. baking soda
1/2 salt
1/2 cup cold butter
1/2 cup chopped dried apricots
2 tsp. grated lemon rind
1/2 cup buttermilk

Directions:
Directions:
In large bowl, combine flour, sugar, baking soda and salt. With pastry blender, cut in butter until mixture resembles coarse crumbs. Stir in apricots and lemon rind. In separate bowl, whisk one egg into buttermilk; stir into flour mixture to form a soft dough.

Turn dough out on to lightly floured surface and knead gently about 10 times. Pat dough into a circle about 3/4 inch thick. Cut with floured water glass to make approx. 3 inch circle. Place on greased baking sheet. Lightly beat remaining egg; brush on scones.

Bake at 400ºF for 10 to 15 minutes or until done. Let cool on wire rack.
