Ingredients: 3 T. Chili powder 2 T ground cumin 1 T. ground coriander 1/2 t. dried red chili flakes 1/4 c. EVOO 3 c. chopped onion 2 c. chopped bell peppers 6 garlic cloves minced 2 lb grass feed ground beef or turkey 1 T. dried oregano 2 T. tomato paste 1 T. salt 1 T. cocoa or 1 oz dark chocolate chopped 12 oz Guinness or lager beer 2 10 oz cans diced tomatoes (or 16 oz tomato sauce) 2 cans kidney beans drained and rinsed 1 can black beans drained and rinsed

Directions:Mix first seasoings in small bowl and heat in heavy pan (or Cuisinart slow cooker) over med high heat for 1 minute then add oil, then onions, peppers, garlic and saute until soften about 5 min. Add meat and saute until no longer pink about 5 min. Add oregano, tomato paste, salt, cocoa powder and stir one min. Add beer and simmer 5 min. Add tomatoes. Bring to boil. the simmer at least 30 minutes or in slow cooker high for 2 hours then switch to warm. Add beans last 20-30 min. Serve with Jalapeno cornbread |

Notes: Can begin with 1/4 lb pancetta or bacon cooked. Can also add 2 t. brown sugar. Also 1 T. cider vinegar at the end. Serve with avocado, cilantro, serrano, cheddar, lime, sour cream
Lately I have changed beef to 1lb. And used RG’s pinto beans cooked 1 lb and used the bean liquid also. And used RG New Mexican Red Chile Powder about 1/3 cup with 1 t cumin, 1 t coriander, 1 T mexican oregano. This makes a very bean-y chili.
