Potatoes
red wine
bay leaves
garlic
pepper
olive oil

Directions:

French Fries:
- cut potatoes into cubes
- fry in vegetable oil
- drain on paper towel
- transfer to deep serving dish

Marinate:
- cut pork into small cubes
- red wine
- diced garlic cloves
- crumbled bay leaves
- salt and pepper
- in a bowl mix all of the above, cover with plastic wrap,
refrigerate about ˝ hour

Picadinho:
-strain pork from marinate
- in deep sauté pan heat a little bit of olive oil
- add pork – stir continuously until nicely browned
- when nicely browned add hot sauce to taste – constantly stirring
- sprinkle a bit of red wine vinegar
- season with garlic and onion powder
- add a little bit of beef broth – constantly stirring allowing flavors to absorb into pork
- add a little bit of red wine
- you can add some baby shrimp at this point (optional)
- you should now have a nice sauce with the pork.
- pour pork and sauce over French fries.
