2 Carrots finely chopped
2 med Zucchini
2 Cup Spaghetti Sauce
1 t olive oil
1 T olive oil
1 Onion Chopped
4 Cloves garlic minced
1 t basil
1/8 t pepper
1 1/2 C mozzarella Cheese (6oz)
1/2 C Parmesan Cheese
6 Lasagna Noodles (Tender)
1/2 C chopped walnuts

Directions:
Directions:
Slice zucchini lengthwise into 9 1/8 slices. Put on baking sheet in single layer and brush with 1 t oil. Broil 3 - 4 " from heat 5 min or until crisp tender. Turning once.
Grease 2 qt sqr casserole. Heat 1 T oil, add carrots, onion and garlic. Saute 5 min until tender. Add spaghetti sauce, basil and pepper. Bring to boiling, reduce heat, cover & simmer 10 min stirring occasionally.
Toss mozzarella and Parmesan cheese. Layer two noodles, 1/3 sauce, 1/3 nuts 1/3 zucchini and 1/3 cheese. Alternate direction of zucchini. Don't add last 1/3 cheese. Bake 375 degrees for 20 min uncovered. Sprinkle with cheese for last 20 min. Let stand 15 min
