1tbsp olive oil
1 pound ground beef
1 medium onion, chopped
1 clove garlic, minced
1 14oz can Italian style stewed tomatoes
1 8oz can tomato sauce
1 6oz can tomato paste
1 box lasagna noodles (prepare according to box directions)
2 large eggs
2 cups cottage cheese
1/2 cup grated Parmesan cheese
2 tsp. chopped parley
1 tsp. salt
1 tsp. pepper
1tsp. season salt
12oz shredded mozzarella
12oz shredded cheddar

Directions:
Directions:
Heat oven to 375. Cook noodles according to box directions. In large pan, add 1 tbsp. oil and saute meat, onion and garlic until meat is browned. Drain fat. Add stewed tomatoes, tomato sauce and tomato paste. Cover and simmer for 15 min. Stir occasionally.

In a large bowl, whisk eggs, then add the cottage cheese, 1/2 parmesan, parsley, pepper and salts.

Spray a 9 x 13 pan with cooking spray. Spread a little of the meat mixture in bottom of pan. Lay one layer of noodles in the bottom of the pan.
Spread half of the egg mixture evenly on top of the noodles. Sprinkle half of the mozzarella and cheddar over the egg mixture. Pour half of he remaining meat mixture on top. Repeat layers in same order.
Sprinkle remaining parmesan on top.

Bake in center of oven for 30-35 minutes. Let stand for 10 minutes before serving.

This is one of my boys favorite recipes. I know I can get Marty and Devin home for dinner if I let them know I'm making lasagna. Marty doesn't like cottage cheese, so sometimes I'll substitute ricotta for cottage. And, when in a hurry, I'll use the no-boil lasagna noodles. This is great recipe to double, one for tonight and one for the freezer.
