2 pieces cooked bluefish ; skinned and flaked (enough to make 2 cups)
Salt ; and black pepper
5 ounces plain goat cheese
1 tablespoon Greek yogurt or sour cream ; if needed
2 teaspoons grated raw onion
Generous ; squeeze of lemon juice
1 heaping teaspoon Dijon
mustard
1/4 teaspoon crushed red pepper
1 tablespoon chopped fresh
parsley

1. In a food processor, combine the bluefish, salt, black pepper, and goat cheese. Pulse the mixture until it is smooth. Add the yogurt or sour cream to make the mixture come together in a puree, if needed.

2. Add the onion, lemon juice, mustard, and red pepper. Work the mixture until it is thoroughly combined. The pate should be loose enough to spread.

3. Pack the pate into a small bowl, sprinkle with parsley, and refrigerate for at least 2 hours for flavors to mellow. Serve with crackers
