1 1/4 cups flour
1 tsp. baking soda
1/2 tsp. salt
2 large eggs
1/2 tsp. vanilla
1 stick butter or 1/2 cup
1 cup sugar
3 very ripe bananas (about 1 cup)mashed
1/2 cup chopped walnuts

Preheat oven to 350º

Sift flour,baking soda and salt into a medium bowl and set aside. Whisk eggs and vanilla together in a cup. Lightly brush a 9 x 5 x 3 loaf pan with butter.
Cream the butter and sugar until light and fluffy. Gradually pour the egg mixture into the butter. Add the banana mixture and chopped nuts. pour into the prepared pan and bake for 55 minutes or a toothpick inserted comes out clean. Cool bread for 5 minutes and then turn out on cooling rack. Makes one loaf
