Cream Puffs Recipe

1/2 c butter or margarine
1 c water
1 c flour
1 tsp vanilla
4 eggs
pinch of salt

Filling:
2 c whipping cream
sugar
vanilla

Optional:
fresh strawberries or raspberries

Directions:
Directions:
In a large pot, bring water and butter/margarine to a rolling boil. Remove from heat.
Add in flour and salt, stir vigorously until the mixture forms a ball. Transfer the dough to a large mixing bowl. Using a wooden spoon or stand mixer, beat in the eggs one at a time, mixing well after each.

Drop 3 - 4 tablespoonful mounds, 3 inches apart onto an ungreased baking sheet.

Bake in a preheated 425º oven for 15 minutes, reduce oven temperature to 350 and bake for an additional 15 to 20 minutes. Centers should be dry. Do no open oven door while baking.

Prepare your whipped cream. Once the cream puffs have cooled, split each cream puff in half and fill them with the whipped cream and, if desired, fresh berries. Replace the tops on each cream puff and serve.

It was very common for "the girls" to bake a chocolate cake, a batch of dad's cookies and cream puffs all on a Saturday morning on the farm. Oh what fun!
