3/4 c. seedless raisins
1/2 c. mayonnaise
1/4 tsp. ground ginger
1/2 tsp. ground nutmeg
1 tsp. soy sauce
2 Tbs lemon juice
1 1/2 c. cooked pork loin, julienne
thinly sliced sweet peppers
1 c. celery, chopped
1/4 c. dried fruit of choice (apricot, peach, pear, fig, pineapple)
3/4 c. coconut
1/2 c. slivered almonds
lettuce leaves

Directions:
Directions:
Bring raisins to a boil in water. Remove from heat and let stand 5 min., drain.
In small bowl combine mayonnaise, ginger, nutmeg soy sauce & lemon. Set aside to marinate.
In large bowl combine pork, celery, dried fruit, peppers & raisins.
In small sauté pan put in 1 Tbs. butter, coconut and almond pieces. Watch closely & stirring often until coconut and almonds are slightly toasted.
Put marinated sauce over pork mixture and toss lightly. chill.
On a large plate arrange salad greens with scoop of pork salad in middle and topped with coconut and pecan mixture if desired. Roll up lettuce and enjoy.
