2 1/4 c. Flour
1 1/4 c. Sugar
2/3 c. oil
2 eggs
1/2 tsp. salt
1/2 tsp. baking soda
1 tsp. baking powder
1 tsp. vanilla
3 mashed bananas
1 c. charoses ( apple, nuts, honey, wine mixed)

Directions:

Put rack in middle of oven. Pre-heat to 350º. Add salt, baking powder, baking soda to flour and sugar in the mixing bowl. Add eggs, oil and vanilla. Mix on low speed until combined. Add the bananas and mix again. Add the charoses until well blended. Transfer to a loaf pan that as been sprayed with Pam and floured or to a Teflon lined pan with a piece of parchment paper in the bottom. Bake 1 hour and 15 Min. until test comes out clean. Cool in the pan and them remove when just warm enough to release easily.

What do you do with Charoses after Passover. It is to good to throw out and you really don't want to eat it all on matzos. Try this bread. You can freeze it and serve when you have company. Enjoy!
