1 3lb. beef brisket
1 lg. onion, chopped
1 rib celery, chopped
1/2 bay leaf
Sliced mushrooms (opt)
Hot Cream Mustard:
3 T. Cold water
1 T. Dry mustard
1/2 c. Sour cream
1 tsp. vinegar
Salt

Directions:
Season meat with salt and pepper to taste. Place onion and celery in heavy two quart casserole. Lay brisket on top and add bay leaf. Cover and bake at 350º for 3 1/2 hours or until meat is meltingly tender. Add mushrooms to casserole 1/2 hour before done. Drippings make a wonderful gravy(start with a roux) instead of the hot cream mustard. Meanwhile make hot cream mustard: in a small bowl combine dry mustard and cold water until its the constancy of heavy cream. Let stand 15-20 minutes and then blend with sour cream, vinegar and salt to taste. Slice brisket thinly and serve with steamed whole potatoes and hot cream mustard.
