1 bag (30oz) shredded hashbrowns
3 cups (12oz) shredded cheddar cheese, divided
½ onion, chopped
1 can cream of mushroom soup
1 can cream of chicken soup
Salt and pepper to taste

Directions:
Directions:
Preheat oven to 350°.
Combine ingredients in a large mixing bowl, using only 2 cups of the shredded cheese.
Spread mixture evenly into 9 x 13 glass baking dish.
Sprinkle the remaining cheese over the mixture; cover with foil.
Bake for 1 hour and 15 minutes.
Remove foil and bake another 15 minutes, or until cheese is golden brown.
Let rest for 15-20 minutes before serving.
