2 TBSP top-quality lean sirloin, ground
1 large potato, peeled and minced
1 egg, beaten
Salt and pepper
1/4 onion, chopped
Hint of cinnamon or cloves
1/4 tsp hot pepper (cayenne or red pepper flakes)

Have butcher grind sirloin 3 times. Combine meat with remaining ingredients, except butter. Mix well with fingers. Butter a skillet. Fill with meat mixture. Pop into preheated 500º oven for 20 minutes. Run under broiler and brown top. Serve alone or topped with fried eggs or adorned with chili sauce.
