Zucchini Loaf Recipe

4 eggs
1 cup oil
2 1/2 cup white sugar
3 cups grated zucchini
2 tsp vanilla
4 1/2 cup flour
3/4 tsp salt
3/4 tsp baking soda
1 1/2 tsp baking powder
1 tbsp cinnamon
3/4 cup chopped nuts, raisins or dates

Beat together eggs, oil, and sugar. Add zucchini and vanilla. Mix well. Sift together and add dry ingredients. Add nuts etc and mix well. Divide into 2 greased loaf pans.
Bake 350 for about 1 hour.
Remove from pans and cool.
Freezes well.
