1 1/2 c crushed pineapple
1/4 c sugar
2 Tbsp Cornstarch
1/2 tsp lemon peel
1 Tbsp butter
1/4 c shortening
1/4 c brown sugar (firmly packed)
1 egg
1 tbsp vanilla
2 c sifted flour
1 tbsp baking powder
1/4 tsp salt
3 tbsp milk

Directions:
Directions:
Combine the pineapple, white sugar, cornstarch, lemon peel and butter in a small saucepan over low heat. Stir until thickened. Then cool. Cream the shortening and brown sugar. Beat in egg and vanilla. Sift together flour, baking powder, and salt, and add to the beaten mixture with milk to make a soft dough. Chill 2 - 4 hrs. (Until firm enough to roll.) Roll on lightly floured surface to 1/8 to 1/4 in thick. Cut into 2 1/2 in. squares. Cut corners of squares toward center 1/2 way. Place 1 heaping teas. pineapple filling in the center of each
square. Fold one piece of each corner toward the center to form pinwheels. Pinch to seal and top with a cherry. Bake at 400ºF for 10 min. Cool on a rack.
