Bake potatoes in the oven. When cooked, cut in half and scoop out the insides but leave some potato on the skin. Butter the skins and brown in the oven at 425º. Top with grated cheese and bake until melted. Serve with sour cream.

I alter this recipe for Kaitlyn. When I remove the baked potato from the skins, I toss it into the mixer and add some butter (a couple of tablespoons), some sour cream and some milk and mash them. I spread the mashed potatoes onto the baked skins and top with cheese and heat in the oven until the cheese melts.

Be sure and cover your baking sheet with aluminum foil for a much easier clean up! I always add bacon pieces on top.
