2 cups diced barbecued Chicken Meat, from leftovers or store-bought roasted chicken
1 ripe avocado, diced
1/2 cup corn kernels
1/4 cup celery, thinly sliced
3 scallions
1 head Bibb Lettuce (or Romaine or Red)
Dressing

Optional Gsrnishes: red peppers, tomatoes, Mexican cheese, croutons

Directions:
Directions:
Toss all ingredients except dressing in salad bowl, then toss in dressing or serve on the side. Add garnishes as desired.

Dressing: either use ranch dressing, or dress it up with some finely chopped roasted red peppers (jarred is OK) and smoked paprika.k
