Ingredients: 1/2 cup of margarine or butter 1/3 cup of sugar 1/4 tsp. vanilla 1 cup all purpose flour 1 8 oz. package of cream cheese (250 g.) (reduced fat if you want) 1/4 cup sugar 1 egg 1/4 tsp vanilla 1/3 cup sugar 1/2 tsp. cinnamon 4 cups thinly sliced, peeled apples (this is the most work) 1/4 cup sliced (slivered) almonds

Directions:Cream margarine, sugar and vanilla. Blend in flour. Spread dough on bottom and sides of a 9 inch spring form pan. Combine SOFTENED cream cheese and sugar; mix well. Add egg and vanilla; mix well. Pour into pastry lined pan. Combine sugar and cinnamon. Toss apples in sugar mixture. Spoon mixture over cream cheese layer; sprinkle with almonds. Bake at 450º for 10 minutes. REDUCE TEMPERATURE to 400º and continue baking 25 minutes. Loosen torte and cool before removing rim of pan. |

Notes: This is probably one of the most stained cookbook pages I have in my entire collection. It came from a collection of recipes put together by my mother's art school - The Garret, in Dundas Ontario. Healthier than many cheesecake recipes because it only calls for one package of cream cheese and lots of apples. I invested in a spring form pan the first time I made this and it lasted over 20 years.
