1/2 cup of margarine or butter
1/3 cup of sugar
1/4 tsp. vanilla
1 cup all purpose flour
1 8 oz. package of cream cheese (250 g.) (reduced fat if you want)
1/4 cup sugar
1 egg
1/4 tsp vanilla
1/3 cup sugar
1/2 tsp. cinnamon
4 cups thinly sliced, peeled apples (this is the most work)
1/4 cup sliced (slivered) almonds

Cream margarine, sugar and vanilla. Blend in flour. Spread dough on bottom and sides of a 9 inch spring form pan. Combine SOFTENED cream cheese and sugar; mix well. Add egg and vanilla; mix well. Pour into pastry lined pan. Combine sugar and cinnamon. Toss apples in sugar mixture. Spoon mixture over cream cheese layer; sprinkle with almonds. Bake at 450º for 10 minutes. REDUCE TEMPERATURE to 400º and continue baking 25 minutes. Loosen torte and cool before removing rim of pan.

This is probably one of the most stained cookbook pages I have in my entire collection. It came from a collection of recipes put together by my mother's art school - The Garret, in Dundas Ontario. Healthier than many cheesecake recipes because it only calls for one package of cream cheese and lots of apples. I invested in a spring form pan the first time I made this and it lasted over 20 years.
