Ingredients: 1/4 cup butter, melted 1 cup chocolate graham cracker crumbs (or regular if it's all you have) 1 Tbsp. sugar 1 250 g. package of light cream cheese, softened 1 egg, lightly beaten 1/3 cup of sugar 1/3 cup sour cream (you can probably sub yogurt) 1 (10 oz) can of mandarin orange slices 2 (1 oz) squares semi-sweet baking chocolate 1 Tbsp. butter

Directions:Combine butter, crumbs and sugar. Press evenly into bottom of an 8 inch pie pan or dish. Bake at 350º for 8 to 10 minutes. Combine cream cheese, egg, 1/3 cup of sugar and sour cream in a small bowl. Beat until smooth. Drain oranges. Reserve 12 sections for garnish. Fold remaining oranges into cream cheese mixture and pour into coated pie shell. Bake at 350º for 35 to 40 min. and the centre is set. Cool. Arrange reserved orange sections on top. Melt chocolate and butter together and drizzle overtop. Chill until ready to serve. |
