2 1/2- 3 lb meaty pork spareribs
salt and pepper
BBQ sauce (recipe found under sauces)
cooked rice (enough to serve 6)

Directions:
Directions:
Cut spareribs into 3" pieces trim off excess fat. Simmer in boiling salted water, approx. 30 mins. (or cook in pressure cooker with 1/2 cup water at 15 lbs pressure for 12 mins) Drain. Arrange ribs in a shallow baking pan. Brush with BBQ sauce and bake at 350º for 15 mins. Turn ribs over and brush with sauce and bake another 15 mins. Baste once more on serving side and return to oven until sauce sets. Serve on heaping mounds of cooked rice.
