Grandma Jo's Spanish Rice Recipe

1 to 1 ½ lbs ground beef
Medium onion, chopped
One or two tablespoons of chili powder, more if you like.
1 teaspoon of ground cumin

2 or 3 regular size cans of chopped or stewed tomatoes
1 can tomato sauce or tomato paste
1 large can chopped green chili peppers – two are better
1 can of beef broth
1 tablespoon or so of chopped garlic

2 cups minute rice or 1 cup regular rice
If there isn’t enough liquid left for the amount of rice, add a little water or another can of broth.

Partially brown some ground beef and onion, add chili powder and cumin, then continue browning until beef is no longer pink. Add the rest of the ingredients except the rice, bring to a simmer and cook 15 minutes or so. Add rice, bring back to a simmer. Turn heat to low, cover and cook until rice is tender, stirring occasionally to keep it from burning. This will take 5 or 6 minutes if you use minute rice, about 30 minutes for regular rice.

Makes a lot, so cut it back if you don’t want to eat Spanish rice for a week!

Never tried this in a crock pot but I bet it would come out great if you put everything except the rice in one and let it simmer all day, then mix in minute rice when you get home, let it cook a bit longer and voila, supper is served!
