3 T Water
1/4 t Salt
1/8 t Freshly Ground Pepper
2 T Extra Virgin Olive Oil
3C Broccoli, trimmed to fairly large florets - approx 1" across with short stems
4 T Butter
1T Shallot - minced
3 Garlic Cloves - minced
1/4 t Salt
1 Lemon - juiced

Directions:
Directions:
1. Stir water, salt & pepper together in a small bowl until salt dissolves. Set aside.
2. Heat oil on medium heat in 12" skillet with tight fitting lid, until just beginning to smoke.
3. Uncover the skillet, add water mixture to the skillet. Add broccoli cook until florets are just beginning to turn bright green but still crisp. Set aside in medium bowl.
4. Melt butter in now empty skillet over medium high heat until butter is browned and releases a nutty aroma, about 1 1/2 minutes.
5. Off heat, add shallot, garlic, salt and pepper and stir until garlic and shallot are fragrant about 1 minute.
6. Stir in lemon juice - cook until reduced slightly.
7. Add broccoli to skillet and toss to coat with browned butter, garlic and shallot. Serve immediately.

The key to making this work is to make sure the broccoli stays bright green and somewhat crisp - you don't want soggy broccoli.
