1 recipe pastry for a 9 inch single crust pie

Filling
1/2 cup white sugar
3 tablespoons all-purpose flour
1/4 teaspoon salt
1 teaspoon ground cinnamon
1 teaspoon lemon zest
5 cups peeled and sliced pears
1 tablespoon lemon juice

Crumble
1/2 cup butter
1/2 cup brown sugar
1 cup flour

Directions:

Combine filling ingredients together and pour into pie crust. Combine crumble ingredients and sprinkle over the top (will seem a like a lot, but just dump it on in). Put in oven preheated to 350ºF and bake for about an hour.

I was skeptical about how good pear pie would be, but it was one of my favorite pies I have ever made. You can use a top crust (with slits for steam) if you do not want to use the crumb topping.
