2 1/2 c. Milk Chocolate Chips
1/3 c. Brown Sugar
1 tsp. Vanilla
1/3 tsp. Salt
1/4 c. Peanut Butter
3/4 c. Powdered Sugar
2 tbsp. Flour
1/2 c. Mini Chocolate Chips

In small saucepan, heat butter until melted.

Whisk in Brown Sugar until dissolved, let bubble 1-2 minutes.

Remove from heat and whisk in Peanut Butter (mixture will be liquidy).

Whisk in Vanilla.

Let sit and cool completely about 20 minutes.

Line mini muffin pan with liners.

Melt 1 1/4 cups of the Chocolate Chips.

Drop 1/2-1 tsp. of melted Chocolate in each Liner.

Use pastry brush to brush chocolate up the sides of the Liner.

Place in freezer for 20 minutes.

The butter/sugar mixture should be cool now.

Whisk Powdered Sugar, Salt and Flour into the butter/sugar mixture until combined (a few lumps will remain).

Fold Mini Chocolate Chips into the mixture.

Dough will be wet so put into the fridge for 15 minutes to harden.

Remove muffin tin and cookie dough.

Place 1 tsp. of cookie dough into chocolate cups.

Once all the cups are full, place back in the freezer for 10-15 minutes.

Melt remaining Chocolate Chips.

Remove cups from freezer and cover each cup with melted chocolate smoothing it with a spoon.

Freeze again for 15 - 20 minutes.
