2-1/2 c. cracked wheat
2 lbs. lean finely ground lamb or beef
2 large onions, finely grated
1 t. salt
1 tsp. black pepper
1/2 tsp red pepper
1/4 tsp cinnamon

Directions:
Directions:
Prepare wheat according to directions. Mix all
ingredients in kneading fashion. Keep hands wet
during mixing by dipping in ice water
To bake:
Spread into large well greased pan and smooth
surface well. Loosen edges from pan and cut to
desired sizes. Pour 2 sticks melted butter over top
and bake at 375 deg. for 1 hr. til golden brown.

My Notes:
I used to eat these at Monsour's restaurant
downtown when I was a kid working across the
street at Scallion's Jewelers. They're still serving
Kibbees today at the Vicksburg Country Club
location. They were also served at the annual
Greek Orthodox Church Luncheon Benefit, along
with the Cabbage Rolls
