21 lb. lean meat 7 lb.
4 lb. beef fat 1 1/3 lb.
6 cups water 2 cups
5 1/4 cups dried milk 1 3/4
1/2 cup sugar 1/6 cup
1 cup + 2 tbsp. salt 1/4 cup
1/2 cup mustard seed 1/6 cup
6 tbsp pepper 2 tbsp. cracked pepper
2 1/2 tbsp. liquid smoke 5/6 tbsp.
2 tbsp cure 2/3 tbsp.

Directions:
mix dried milk and water together add the rest of the ingredients and stuff into casings and cook till internal temp. reaches 185º then shower in cold water to 90º allow to dry before refrigeration.
