1 cup coconut oil
1 cup cocoa
1/3 cup honey
1 tsp vanilla
50 drops of peppermint oil (if you want to make it mint chocolate)

Melt coconut oil in a double boiler (I just stack two pots on top of each other with water in the bottom pot). Add rest of ingredients, stir until melted. Line 8X8 pan with parchment paper and pour mixture in. Freeze, cut into chunks once finished

This chocolate is amazing and easy to make but does melt easily at low temperatures, so keep it refrigerated and don't keep it out at room temperatures for extended periods of time
