8 large cucumbers
14 medium green tomatoes (can substitute some small unpeeled zucchini)
4 medium onions
½ bunch celery
3 red or green sweet peppers
½ cup pickling salt
6 cups white sugar
4 cups white vinegar
1 teaspoon turmeric
1 teaspoon celery seed
½ teaspoon cayenne pepper
1/3 cup flour mixed in another ½ cup sugar

Finely chop veggies in the food processor. It works best to chop the vegetables into large pieces before using the food processor. Be careful not to get them too fine. You do not want mush. You can use an old fashioned grinder if you have one (see picture on previous page).
Place in a non-reactive dish and add the pickling salt and let stand over night.
Drain and rinse veggies. It is important to rinse the veggies well or the relish will be too salty.
In a large cooking pot add sugar and 3 1/2 cups vinegar to veggies and cook at slow boil for ½ hour.
Put spice, flour and sugar mixture, and 1/2 cup vinegar in a jar and shake well.
Add to the vegetable mixture and cook over medium heat for about 15 minutes until it is thick. Stir frequently so it does not stick.
Place in sterilized jars leaving a 1 centimeter head space.
When they seal the lids should become concaved. Can be canned to promote sealing.

Important: This recipe was based on garden veggies (which tend to be smaller than the ones bought in the store). If using produce from the grocery store use a few less.
This turns our best if you have a cone shaped strainer/colander to drain and to measure the veggies in. One heaping strainer is one batch. The relative proportion of each vegetable is not critical. However, it is important to get rid of the salt and to have enough sauce. It is important to use pickling salt as it does not have iodine in it.
