1 1/2 c. flour
3 tbsp. sugar
2 1/2 tsp. baking powder
1/4 tsp. baking soda
1/4 tsp. salt
1 tsp. grated orange zest
5 tbsp. cold butter, cut into small pieces
1/2 c. dried cranberries
2/3 c. low-fat buttermilk, plus 1 - 2 tbsp. as needed

Preheat oven to 400º. Spray scone pan with cooking spray. In a large bowl stir together flour, sugar, baking powder, baking soda, salt, and orange zest with a pastry blender. Cut butter into the flour mixture until it is coarse. Stir in cranberries. Make a well in the center of the flour mixture and add buttermilk. Mix until combined, but do not over mix. Use extra buttermilk if the dough is too dry. Transfer dough to a floured surface and shape into a round. Cut into 8 wedges and place in scone pan. Bake for 18 minutes.
