2 slabs baby back pork ribs (about 2 pounds)
coarsely ground black pepper
salt
1 tablespoon ground red chili pepper or whatever seasoning you like.

1 batch Brenda's BBQ sauce - recipe in this book

Preheat oven to 300 º F (150 º C). Cut each full rack of ribs in half, so that you have 4 half racks. Sprinkle salt and pepper (more pepper than salt), and 1 tablespoon chili pepper over meat. Wrap each half rack in aluminum foil. Bake for 2 1/2 hours. Or just put them on a rack in the roaster, add a little water and cover tightly and bake for 2 1/2 hours.
Make a batch of Brenda'a Barbecue sauce - recipe in this book. Remove it from
from heat, and set sauce aside.This is more barbecue sauce than you will need but it is excellent on other meats and can be kept in the fridge for several weeks.

Preheat an outdoor grill for high heat.
Remove the ribs from the oven, and let stand 10 minutes. Remove the racks of ribs from the foil, and place on the grill. Grill the ribs for 3 to 4 minutes on each side. Brush sauce on the ribs while they're grilling and just before you serve them (adding it too early will burn it). Or bake them in the oven after brushing with BBQ sauce for 15 minutes.
If you cook more ribs than you need they freeze well and you can reheat them in the microwave or on the barbecue.
