2 lbs. ground beef
2 large onions, chopped (optional, leave out because of chunky salsa and kids)
1 can (8 oz.) tomato sauce
1 (16 oz.) jar of salsa
1 teaspoon each of cumin, chili powder, garlic powder
1 can (17 oz.) creamed corn
12 corn tortillas
4 plus oz. grated cheese (can use any yellow combination of yellow and mozzarella cheese)

Preheat oven to 350 degrees. Brown meat with onion. Add sauces, seasonings, and corn. Mix well. Tear tortillas into bite-size pieces and mix into meat mixture until all tortillas are coated with sauce. Cover and bake 35-50 minutes. Add cheese and cook another five minutes, uncovered.

Top with sour cream and more salsa, if you like. Eat with a fork or scoop it up with tortilla chips. Heats up next day extremely well. Split up recipe into smaller dishes for a smaller family
