Ingredients: 3 strips uncooked bacon, chopped into half-inch pieces 1 small sweet onion, diced 3/4 cup chicken broth (vegetable broth should also work!) 2 (14.5 ounce) cans pinto beans, rinsed and drained 2 tablespoons sour cream 1/4 teaspoon cumin A pinch cayenne pepper Cilantro and additional sour cream, for garnish

Directions:Heat a large saucepan over medium heat and cook chopped bacon until crisp, approximately 3-4 minutes, stirring occasionally. Remove bacon from pan and place in a small bowl. Add diced onion to the remaining bacon grease and saute for 1-2 minutes or until soft. Add broth and beans to the saucepan and bring to a boil. Stir occasionally. Once mixture comes to a boil mash the beans with a potato masher until they reach desired texture. (I like to leave half of the beans intact and mash the rest.) Simmer refried beans for 5 more minutes. Turn off heat and stir in reserved bacon, sour cream, cumin, and cayenne. Garnish refried beans and serve. |
