Chocolate Cake

3 c flour
2 c hot water
2 c sugar
¾ c vegetable oil
½ c cocoa powder
2 T white vinegar
2 t baking soda
1 T instant coffee granules
1 t salt
1 T vanilla

Grease two 8 inch round pans. Preheat oven to 350˚.

Whisk dry ingredients together in a large mixing bowl.

Combine water, oil, vinegar, coffee, and vanilla in a large measuring cup. Add to the dry ingredients and whisk just until combined – a few lumps are ok. Divide batter among pans, and then bake until toothpick inserted in center comes out clean, 35 to 40 minutes. Cool cakes for 15 minutes on a rack, then invert onto the rack.
 

Chocolate Icing

1 stick butter
1¼ c heavy cream
1½ c sugar
¼ c sour cream
1¼ c cocoa powder
1 t instant coffee granules
2 t vanilla
pinch salt

Directions:
Directions:
Melt butter in a large saucepan over medium heat. Stir in sugar, cocoa, and salt. Mixture will be thick and grainy. Combine heavy cream, sour cream, and coffee in a large measuring cup, mixing until smooth. Gradually add cream mixture to chocolate until blended and smooth. Cook until sugar has dissolved, and mixture is smooth and hot to the touch. Do not boil.

Off heat, add vanilla. Cool icing at room temperature until spreadable, about 3 hours.
