3 Cup Flour
2 Tsp Baking Soda
6 Tbsp Cocoa
1 Tsp Salt
2 Cup Sugar
3 Tbsp Vinegar
2 Tsp Vanilla
3/4 Cup Oil (I used vegetable oil)
2 Cup Cold Water

Vegan Chocolate Frosting
2 Cup Powdered Sugar
1/4 Cup (1/2 stick) Soy Margarine (softened to room temp)
1/4 Cup Plain Unsweetened Soy Milk (I used soy creamer to make it thicker)
3/4 Cup Unsweetened cocoa powder
1/2 Tsp Vanilla

Directions:
Directions:
Measure flour, baking soda, cocoa, salt, and sugar into large mixing bowl. Add vinegar, vanilla, oil, and water and mix well. Pour batter into greased 9x13 baking pan (or 24 cupcake tins, maybe 28). Bake at 350º for 45 minutes (for cupcakes bake for 20-22 min and keep checking on them every 2-3 min until they are done). A toothpick should come away clean after being dipped into the center.

Vegan Chocolate Frosting
In a medium bowl, cream sugar and margarine until thick but well combined. Add milk, cocoa, and vanilla. Continue mixing until smooth.

Lenten Chocolate Icing
Mix powdered sugar, cocoa, and a little softened margarine
Add enough warm water to make a smooth, creamy icing.
