4 c. sugar (2 c. honey)
2 c. butter
8 eggs, well beaten
4 c. finely grated carrots
4 c. chopped pecans
4 c. chopped dates
3 c. raisins
6 c. bread crumbs
4 c. flour
4 tsp soda
4 tsp cinnamon
2 tsp cloves
4 tsp nutmeg

Directions:
Directions:
Cream sugar, butter.
Beat eggs until fluffy.
Stir in carrots, nuts & raisins.
Sift & mix in flour, soda & spices & mix with bread crumbs.
Add dry mix to pudding mixture.

Spoon mixture into quart jars - only about 1/2 full to allow for expansion during cooking.
Put lids & rings on jars & process in hot water bath for 2 hours.

As far back as I can remember my Grandma Arnell, & then my mom made this as a special holiday treat. It has always been my favorite part of Thanksgiving or Christmas dinner!
Zap this in the microwave for 20-30 seconds

This was always served with hard sauce (powdered sugar & butter) or a creamy "rum sauce" but I (Liana) serve it with whipped cream
