Ingredients:  
1/2 c. shortening
3/4 c. honey ( 1 1/2 c brown sugar)
1 egg, beaten
1 c. buttermilk
1 tsp soda
1/2 tsp salt
2 c flour
2 c cut rhubarb

Directions:
Directions:
Preheat oven 350º
Cream shortening & honey.
Add beaten egg, buttermilk & soda
Fold in rhubarb

Spread in greased & floured 9x13 pan

Sprinkle with 1/4 c. white sugar & 1tsp cinnamon

Bake 30-35 minutes

The sugar & cinnamon makes a little crusty top on the cake but it's great without it.
