1/4 cup (1/2 stick) butter
1/3 cup finely chopped onion
1/3 cup finely chopped green pepper
1/2 cup finely chopped celery
3-4 Tbsp. flour
1 tsp. salt
1/8 tsp. pepper
1 quart milk
1 7 3/4-ounce can salmon, drained
2 Tbsp. chopped pimiento

Directions:

Melt butter in saucepan. Saute onion, green pepper and celery until lightly browned. Add flour, salt and pepper, mixing to a smooth paste. Cook over medium heat, about 1 minute. Remove from heat and add 1/2 of the milk, stirring until blended. Return to heat and stir constantly until mixture begins to thicken. Add remaining milk. Heat to simmering point; cook about 5 minutes. Add salmon, broken into chunks, and pimiento.
Heat to serving temperature.
