Classic Cookie Dough
2 tsp Coconut Extract
1/2 C Coconut Flakes, sweetened
1/2 C Cranberries, chopped - dried & sweetened
1/2 C Pistachios, chopped

Directions:
Directions:
Mix classic cookie dough with coconut extract, coconut flakes, cranberries, pistachios, and flour. Divide dough in half and , using a piece of parchment paper, roll dough into logs about 1 1/2" thick and 16" long. Roll each log in 2 tbsp coconut, lightly coating outside of dough. Wrap with plastic wrap. Refrigerate about 30 mins. Unwrap, slice into 1/2" thick circles and place on prepared backing sheet. Follow classic cookie dough baking directions, but bake until firm, about 10 mins.
