Olive oil
1 onion, Diced
1 red bell pepper, diced
1 green bell pepper, diced
2 garlic cloves, sliced
1 red chili, seeded, chopped, or dried red peppers to taste
1 tsp (5 ml) cumin seeds
5 tomatoes, chopped+
Sea salt and freshly ground pepper
4 eggs
1 tbsp (15 ml) chopped fresh coriander
1 green onion, chopped
Crusty bread

Heat a little oil in a large, heavy frying pan over medium heat and cook onion for 5 minutes or until soft.
Add red and green peppers and continue cooking for 5 minutes, then add garlic and chili and cook another 1 to 2 minutes, until soft.
Add cumin and cook another minute, then add the tomatoes, salt and pepper, and cook for 15 to 20 minutes, until tomatoes have softened.
You may need to add 3 to 4 tbsp (45 to 60 ml) of water if tomatoes are not moist. The mixture should be the consistency of a thick sauce.
Check seasonings and add more salt and pepper if necessary.
Make 4 wells in the tomato sauce and break an egg into each well.
Cover the pan and cook gently over medium-low heat for 5 to 6 minutes or until the egg whites are set and yolks are still runny.
Serve sprinkled with coriander and onions, with crusty bread on the side.
