- 2 cups flour
- 2 tsp. baking powder
- 2 tsp. ginger
- 1/2 tsp. cinnamon
- 1/2 tsp. salt
- 1/4 cup crystalized ginger, finely chopped
- 3/4 cup shortening veg
- 1/2 cup brown sugar
- 1/2 cup white sugar
- 2 tablespoon molasses
- 1 egg
- 1 tsp. lemon peel , finely chopped

Directions:

Combine all the dry ingredients including the gingers. Set aside. Beat shortening and sugars until light and creamy. Add molasses, egg and lemon peel to sugar mixture. Gradually add into dry ingredience and mix until smooth. Place 1/4 cup sugar in a bowl . Form the dough into small balls 3/4-1 inch. Roll in sugar. Place on baking sheet 2 '' apart, lined with parchment paper.
Preheat oven to 350 F. Bake 10 min until golden brown and crackled on top.
Let cool on baking sheet for a few minutes before removing
