Texas Squash Casserole Recipe

5 large yellow squash or 2 bags of frozen
1 onion
1 cup shredded cheddar cheese
1/2 cup mayonnaise
1 package of bread crumbs
1 egg, beaten
1 packet of dry ranch dressing mix
12 crumbled saltine crackers
2 Tbsp. margarine, melted

Directions:
Directions:
Cut squash into 1 inch chunks and chop onion coarsely; boil together until tender. Drain off the water and mix in the above ingredients, except margarine and bread crumbs. Pour mixture into greased casserole. Combine bread crumbs and melted margarine; sprinkle over top of casserole. Bake at 350º for 30 minutes or until done/set.

Good for holidays and company. People that don't like squash sometimes are ok with this, sometimes not.
