1 Tbsp Oil
1 Onion chopped
2 cloves Garlic (fresh)
3/4 cup Assorted dried veggies
(dried peppers, mushrooms, zuchini)
or 1 Fresh Green Pepper
12 (can use powdered) Eggs
1/2 tsp each Salt, Pepper, Cayenne
1/2 lb Mozza cheese (cubed)

In 10-12" inch dutch oven, melt butter/oil and saute onion, garlic and green pepper. If using assorted dried veggies soak veggies in water overnight to rehydrate. Combine eggs and the rest of the ingredients and pour over the onion and peppers. Cook until set, lifting the edges and allowing the uncooked egg to flow underneath. Cut into wedges. Serves 6 people.
