1/2 c rice
3 c milk
1/2 c sugar
rind of 3/4 lemon
1 1/2 T lemon juice
3/4 t salt
2 egg yolks (beaten)
2 egg whites (beaten stiff)
2 T powdered sugar
1/4 t lemon extract
Directions:
Directions:
Cook rice in milk until soft.
Add next five ingredients to pot.
Stir gently and cook until thick
Turn into buttered casserole and cool.
Add powdered sugar and lemon extract to egg whites and pile over pudding.
Bake at 350º until merangue browns.
