1 bag fresh baby spinach
1/2 c. sliced almonds
1 large can mandarin oranges

Dressing:
3 T. orange juice concentrate, not necessary to thaw
2 T. sugar
2 T. cider vinegar
1 1/2 tsp. onion, finely minced
1/4 tsp. salt
1/2 c. vegetable oil
1 1/2 tsp. poppy seeds

Dressing:
Add all ingredients into a mason jar, place lid and ring securely, shake to blend. Store prepared dressing in refrigerator until ready to use.

Salad:
In large bowl, toss together spinach, almonds and oranges. Drizzle small amount of dressing on salad, reserving some for individual taste; toss and serve.
